What that’s not vegan? (Part II – Imitation Crab)

Is imitation crab vegan?

I’ve encountered imitation crab most in California rolls: avocado + cucumber+ imitation crab + sushi rice + nori. As a kid I would – I hate to admit it – pick out the imitation crab and proceed to eat the sushi roll. I’ve always disliked crustaceans. I distrust their bright orange, splintering shells and beady black eyes. While reviewing our local sushi spot’s sushi menu, the thought crossed my mind: What is imitation crab? I thought it was fake meat, a la Beyond Burger or tofu “hot dog” style. But it turns out it is meat — not crab meat, mind you — but fish meat, to be more specific.

Short Answer: Imitation crab is type of seafood made of starch and finely ground white fish that is reshaped to resemble the meat of a crab’s leg. So it’s not vegan.

Shorter Answer: No. Imitation crab is not vegan.
