Millennial avocado toast

For today’s offering I have combined two quintessential millennial foods: homemade sourdough bread + smashed avocados.

It’s tasty! It’s filling! It provoked a surprising amount of controversy a couple of years back when it was the “cause” of millennials’ dire financial outlook. It’s avocado toast!

The toast below did not cost me $6, but it might have in a café. Whip up one of these babies and pair with a steaming mug of your favorite tea for an at-home café experience.

Recipe

(Serves 1-2, 10 minutes cook time):

Ingredients:

  • 2 slices sourdough bread (store-bought is fine)
  • 1 ripe avocado (Here’s how to tell if an avocado is perfectly ripe.)
  • Small handful microgreens or chopped spinach
  • 1/2 tsp urfa biber chili pepper or Aleppo pepper
  • 1/2 tsp flaky sea salt
    • *Can substitute the dried tears of a millennial who just realized how old their parents were when they bought their first house
  • Good quality olive oil (for drizzling)

Steps

  • Slice 1-2 pieces of sourdough.
  • Toast to desired toasty-ness.
  • Peel and pit the avocado. Slice and layer on the bread or smush onto the bread with a fork.
  • Wash and dry microgreens.
  • Sprinkle each piece of toast with 1/4 tsp urfa pepper and 1/4 tsp salt.
  • Top with dried microgreens and a drizzle of olive oil.

Alternative toppings to microgreens: sautéed mushrooms + pine nuts; pesto; almond cheese or vegan cream cheese; sun-dried or sautéed tomatoes. The possibilities are endless!
